Raspberry Cream Cheese Muffins

Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.

Add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

Gently fold in the cream cheese and raspberries.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
