  2. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In another bowl, mix together the softened cream cheese, powdered sugar, and raspberry jam until smooth.
  6. Take a tablespoon of the cookie dough and flatten it in your hand.
  7. Place a teaspoon of the cream cheese mixture in the center of the flattened dough.
  8. Fold the edges of the dough over the cream cheese mixture and seal it, forming a ball.
  9. Repeat with the remaining dough and cream cheese mixture.
  10. Place the stuffed cookies onto a baking sheet lined with parchment paper.
  11. Bake at 350°F (175°C) for 12-15 minutes or until the edges are lightly golden.
  12. Allow the cookies to cool for 5 minutes on the baking sheet, then transfer them to a wire rack to cool completely.
