Raspberry-Almond Linzer Cookies
Linzer cookies are named after the city of Linz in Austria, where they originated.

In a medium bowl, whisk together the all-purpose flour and ground almonds.

In a separate large bowl, cream together the granulated sugar and softened butter until light and fluffy.

Add the egg yolk and vanilla extract to the butter mixture and mix until well combined.

Gradually add the flour mixture to the butter mixture, mixing until a dough forms.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one disk of dough to 1/8-inch (3mm) thickness.

Using a cookie cutter, cut out an equal number of rounds and stars from the rolled out dough.

Place the rounds on the prepared baking sheet and spoon a small amount of raspberry jam onto the center of each round.

Top each round with a star-shaped cutout, pressing lightly to seal the edges.

Repeat steps 7-10 with the remaining dough.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the cookies with powdered sugar.
