Wrap beets in aluminum foil and roast for 40 minutes, or until tender. Let cool, then peel and dice.

In a large mixing bowl, combine cooked quinoa, diced beets, chopped red onion, diced cucumber, crumbled feta cheese, chopped fresh parsley, lemon juice, olive oil, salt, and black pepper.
