  3. Add garlic and ginger, and cook until fragrant.
  4. Add carrots and cook until slightly tender.
  5. Push vegetables to one side of the skillet and add beaten eggs to the other side.
  6. Scramble the eggs and then mix them with the vegetables.
  7. Add cooked quinoa, frozen peas, soy sauce, salt, and black pepper.
  8. Stir-fry for a few minutes until everything is well combined and heated through.
  9. Remove from heat and garnish with chopped green onions.
  10. Let it rest for 5 minutes before serving.
