Quick & Easy Black Eyed Peas and Cornbread
Black eyed peas are considered a symbol of good luck and prosperity in Southern cuisine, especially when eaten on New Year’s Day.

Rinse and drain the black eyed peas.

In a large pot, heat the vegetable oil over medium heat.

Add the onion, garlic, bell pepper, and celery. Sauté until the vegetables are softened.

Stir in the smoked paprika, cayenne pepper, salt, and black pepper.

Add the black eyed peas and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 30 minutes.

While the peas are simmering, preheat the oven to 400°F (200°C) and grease a baking dish.

In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt.

In a separate bowl, whisk together the milk, egg, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Pour the cornbread batter into the greased baking dish and spread evenly.
