  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, and mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half. Roll out each half between two sheets of parchment paper into a rectangle about 1/4 inch thick.
  5. In a small bowl, mix together the ground cinnamon, ginger, and nutmeg. Sprinkle the spice mixture evenly over each rolled-out dough.
