Pumpkin Pinwheel Cookies

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half. Roll out each half between two sheets of parchment paper into a rectangle about 1/4 inch thick.

In a small bowl, mix together the ground cinnamon, ginger, and nutmeg. Sprinkle the spice mixture evenly over each rolled-out dough.

Starting from one long side, carefully roll up each rectangle of dough into a tight log. Wrap each log in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

Remove the chilled dough logs from the refrigerator and unwrap. Using a sharp knife, slice each log into 1/4 inch thick rounds.

Place the cookie rounds onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

In a small bowl, beat together the softened cream cheese and powdered sugar until smooth. Spread a thin layer of the cream cheese mixture onto the flat side of half of the cookies. Top with the remaining cookies to create sandwich cookies.
