  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, combine the pumpkin puree, eggs, brown sugar, vegetable oil, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped apples and walnuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 10 minutes.
  9. Transfer the muffins to a wire rack to cool completely before serving.
