Preheat the oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.

Pour the filling into the prepared crust and smooth the top with a spatula.

Bake for 60 minutes or until the edges are set and the center is slightly jiggly.

Turn off the oven and leave the cheesecake in the oven for 1 hour to cool gradually.

Remove the cheesecake from the oven and let it cool completely at room temperature.

Refrigerate for at least 2 hours or overnight.

Before serving, garnish with whipped cream and sprinkle with cinnamon.
