Peel and grate the potatoes and onion.

Place the grated potatoes and onion in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, onion, eggs, matzo meal or breadcrumbs, salt, and black pepper. Mix well.

Pour the mixture into the prepared baking dish and smooth the top.

Drizzle the vegetable oil over the top.

Bake for about 60 minutes or until the top is golden brown and crispy.
