Preheat the oven to 350°F (175°C).

Cut the bread into small cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes or until golden brown.

In a large skillet, melt the butter over medium heat. Add the onion and celery, and cook until softened.

Add the tarragon and sage, and cook for another minute.

In a large bowl, combine the toasted bread cubes, onion mixture, chicken broth, salt, and pepper. Mix well.

Transfer the mixture to a baking dish and cover with foil. Bake for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is crispy.

Let the stuffing rest for 5 minutes before serving.
