Boil the potatoes until tender, then mash them.

In a large mixing bowl, combine the bread flour, yeast, salt, and sugar.

Add the mashed potatoes, milk, and melted butter to the bowl. Mix well to form a dough.

Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rest for 1 hour, or until it doubles in size.

Preheat the oven to 180°C (350°F).

Punch down the dough and knead it again for a few minutes.

Roll out the dough into a rectangle shape, about 1/2 inch thick.

Sprinkle the grated cheddar cheese, Parmesan cheese, and chopped parsley evenly over the dough.

Roll up the dough tightly, starting from the long side.
