Potato biscuits are a popular Southern dish in the United States, often served with fried chicken or gravy.

Preheat the oven to 200°C (400°F). Boil the potatoes until tender, then drain and mash them.

In a large bowl, combine the mashed potatoes, flour, baking powder, salt, and butter. Mix well until a dough forms.

Gradually add the milk and knead the dough until smooth. Fold in the grated cheddar cheese and chopped parsley.

Roll out the dough on a floured surface to a thickness of about 5 cm (6 inches). Use a round cookie cutter to cut out biscuits.

Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown.
