Boil the potatoes until tender. Drain and mash.

In a large bowl, combine the mashed potatoes, arugula or spinach, breadcrumbs, egg, flour, salt, and black pepper. Mix well.

Shape the mixture into small croquettes.

Heat vegetable oil in a frying pan over medium heat.

Fry the croquettes until golden brown on all sides.
