Preheat the oven to 180°C (350°F).

Peel and slice the potatoes into thin rounds.

In a saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

Gradually whisk in the milk until smooth. Add the minced garlic, thyme, salt, and black pepper. Continue cooking for 5 minutes, stirring occasionally.

Layer half of the potato slices in a greased baking dish. Sprinkle half of the grated smoked cheese on top.

Pour half of the milk mixture over the potatoes and cheese.

Repeat the layers with the remaining potatoes, smoked cheese, and milk mixture.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden and the potatoes are tender.
