Rhubarb is often referred to as the ‘pie plant’ because it is commonly used in pies and other baked goods.

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the rhubarb and granulated sugar. Let it sit for 10 minutes.

In a separate bowl, mix the flour, oats, brown sugar, cinnamon, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Press half of the oat mixture into the bottom of a baking dish.

Spread the rhubarb mixture over the oat layer.

Sprinkle the remaining oat mixture over the rhubarb.

Bake for 40 minutes or until the top is golden brown and the rhubarb is tender.

Let it cool for 10 minutes before serving.
