Popovers are called so because they ‘pop over’ the sides of the pan while baking, creating a light and airy hollow center.

  1. Preheat the oven to 450°F (230°C). Grease a popover pan or muffin tin.
  2. In a mixing bowl, whisk together flour and salt.
  3. In a separate bowl, whisk together milk and eggs.
  4. Gradually pour the milk and egg mixture into the flour mixture, whisking until smooth.
  5. Stir in melted butter.
  6. Fill each popover cup about 3/4 full with the batter.
  7. Place the pan in the preheated oven and bake for 20 minutes.
  8. Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 15 minutes.
  9. Remove from the oven and let the popovers rest in the pan for 5 minutes.
  10. Serve warm.
