  1. Preheat the oven to 375°F (190°C). Roll out the puff pastry and cut into 6 squares. Place the squares on a baking sheet lined with parchment paper.
  2. In a bowl, combine the pomegranate seeds, sliced pears, granulated sugar, cornstarch, and lemon juice. Mix well.
  3. Spoon the fruit mixture onto the center of each puff pastry square. Fold the edges of the pastry over the fruit, leaving the center exposed.
  4. In a small bowl, whisk together the egg and water. Brush the edges of the pastry with the egg wash.
  5. Bake for 25 minutes, or until the pastry is golden brown. Allow the tarts to cool for 15 minutes before serving.
  6. Serve the pomegranate-pear tarts warm or at room temperature.
