Citrus and Cranberry Shortbread Cookies
Shortbread cookies originated in Scotland and are traditionally made with only three ingredients: butter, sugar, and flour.

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

Add the orange zest, lemon zest, and vanilla extract to the butter mixture and mix well.

In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Fold in the chopped dried cranberries.

Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes.

Once chilled, slice the dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
