  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan.
  3. In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the pomegranate juice.
  4. Pour the cream cheese mixture over the crust in the springform pan. Bake for 50-60 minutes or until the center is set.
  5. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely.
  6. Once cooled, refrigerate the cheesecake for at least 2 hours or overnight.
  7. Before serving, top the cheesecake with pomegranate seeds and whipped cream.
