  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a separate mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  4. In a small saucepan, heat the pomegranate juice over medium heat. In a separate bowl, whisk together the cornstarch and a small amount of cold water to make a slurry. Add the slurry to the heated pomegranate juice and cook until thickened, stirring constantly. Remove from heat and let cool slightly.
  5. Pour the cream cheese mixture onto the crust in the springform pan. Drizzle the pomegranate sauce over the top and use a toothpick or knife to create swirls.
  6. Place the pan on a baking sheet and bake for 55-60 minutes, or until the center is set. Turn off the oven and leave the cheesecake in the oven for an additional 1 hour to cool gradually.
  7. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 2 hours, or overnight, before serving.
  8. Garnish with pomegranate seeds and whipped cream before serving.
