  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a saucepan, combine plums, sugar, and lemon juice. Cook over medium heat until plums are soft and mixture thickens. Set aside.
  3. In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in the butter until mixture resembles coarse crumbs.
  4. In a small bowl, beat the egg and vanilla extract. Add to the flour mixture and mix well.
  5. Press half of the mixture into the bottom of the prepared baking dish. Spread the plum filling over the crust. Sprinkle the remaining mixture over the filling.
  6. Bake for 30 minutes, or until golden brown. Allow to cool before cutting into bars.
  7. Serve and enjoy!
