  1. In a saucepan, combine plums, mixed berries, sugar, water, and vanilla extract. Cook over medium heat until the fruits are soft and the sugar has dissolved.
  2. Remove the crusts from the bread slices and cut them into circles to fit the serving glasses.
  3. Line the serving glasses with the bread slices, pressing them gently to fit.
  4. Spoon the cooked fruits into the bread-lined glasses, making sure to distribute them evenly.
  5. Cover the glasses with plastic wrap and place a weight on top to compress the pudding. Refrigerate for at least 3 hours.
  6. To serve, remove the plastic wrap and invert the glasses onto serving plates. Gently tap the glasses to release the puddings.
  7. Garnish with whipped cream and mint leaves.
  8. Serve chilled.
