  1. Preheat the oven to 180°C (350°F).
  2. Spread the pistachios on a baking tray and roast them for 8-10 minutes. Let them cool, then roughly chop.
  3. In a saucepan, combine the rhubarb and sugar. Cook over medium heat until the rhubarb softens and releases its juices. Remove from heat and let it cool.
  4. In a separate saucepan, prepare the custard by mixing the custard powder, sugar, and milk. Cook over medium heat, stirring constantly, until the custard thickens. Remove from heat and let it cool.
  5. Cut the sponge cake into small cubes.
  6. In individual serving glasses, layer the sponge cake, rhubarb compote, chopped pistachios, and custard. Repeat the layers until the glasses are filled.
  7. Top each glass with a dollop of whipped cream and sprinkle with additional chopped pistachios.
  8. Refrigerate for at least 2 hours to allow the trifle to set.
  9. Serve chilled and enjoy!
