Pistachios are one of the oldest flowering nut trees and have been enjoyed for thousands of years!

  1. Preheat the oven to 180°C.
  2. In a food processor, pulse the pistachios until finely ground.
  3. In a large bowl, whisk together the flour, ground pistachios, sugar, baking powder, and salt.
  4. In a separate bowl, beat the eggs, melted butter, Greek yoghurt, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  6. Pour the batter into a greased and lined cake pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving.
