Preheat the oven to 180°C.

In a food processor, pulse the pistachios until finely ground.

In a large bowl, whisk together the flour, ground pistachios, sugar, baking powder, and salt.

In a separate bowl, beat the eggs, melted butter, Greek yoghurt, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Pour the batter into a greased and lined cake pan.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Dust with powdered sugar before serving.
