Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire rack to cool completely.
  7. In a chilled mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.
  8. Once the cake has cooled, slice it horizontally into three equal layers. Place one layer on a serving plate and spread a layer of whipped cream on top. Repeat with the remaining layers.
  9. Garnish the top with fresh berries. Refrigerate for at least 1 hour before serving.
