Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, combine the strawberries, pink moscato wine, and sugar. Let it sit for 15 minutes to macerate.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the milk and vanilla extract, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  9. Once the cake has cooled, slice it horizontally into two layers.
  10. Place the bottom layer on a serving plate and spoon half of the macerated strawberries onto it. Spread a layer of whipped cream on top.
  11. Place the second layer of cake on top and repeat with the remaining strawberries and whipped cream.
  12. Garnish with fresh mint leaves, if desired.
  13. Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
  14. Slice and serve.
