Pineapple Skillet Cake

Preheat the oven to 350°F (175°C).

In a large bowl, combine the all-purpose flour, baking powder, and salt.

In another bowl, whisk together the melted butter, granulated sugar, egg, and vanilla extract.

Gradually add the dry ingredients into the wet ingredients and mix until well combined.

Drain the pineapple chunks, reserving the juice. Spread the pineapple chunks evenly in a 10-inch skillet.

Sprinkle the brown sugar over the pineapple.

Pour the cake batter over the pineapple and smooth the top.

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake rest in the skillet for 10 minutes.

Invert the skillet onto a serving plate to release the cake.

Garnish with maraschino cherries.
