Pineapple Shortcakes

Preheat the oven to 425°F (220°C).

In a large bowl, combine the flour, sugar, baking powder, and salt.

Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Stir in the milk and vanilla extract until the dough comes together.

Turn the dough out onto a lightly floured surface and knead gently a few times.

Roll out the dough to about 1/2 inch thickness and cut into desired shapes.

Place the shortcakes on a baking sheet and bake for 12-15 minutes, or until golden brown.

Allow the shortcakes to cool for 10 minutes.

Split the shortcakes in half and fill each with diced pineapple.
