  4. Remove from heat and stir in the vanilla extract.
  5. Fold in the pineapple chunks.
  6. In a separate bowl, whip the whipping cream until stiff peaks form.
  7. In individual serving glasses, alternate layers of the pineapple mixture, whipped cream, and graham cracker crumbs.
  8. Repeat the layers until all the ingredients are used, ending with a layer of whipped cream.
