Cheesecake has been enjoyed as a dessert since ancient Greece, where it was served to athletes during the first Olympic games.

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared baking dish.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, mix together the crushed pineapple and ground ginger. Add the pineapple mixture and flour to the cream cheese mixture. Stir until well combined.
  5. Pour the batter over the crust in the baking dish. Smooth the top with a spatula.
  6. Bake for 35-40 minutes or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool in the baking dish for 2 hours.
  7. Once cooled, refrigerate for at least 2 hours or overnight.
  8. Before serving, dust the top with powdered sugar. Cut into bars and enjoy!
