Pine Nut Marshmallow
Pine nuts are actually seeds, not nuts. They come from the cones of pine trees and have a unique buttery flavor.
This is vegetarian and gluten free recipe. Dish can be prepared in 150 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

In a dry skillet, toast the pine nuts over medium heat until golden brown. Set aside to cool.

In a small bowl, sprinkle gelatin over 1/2 cup of water and let it bloom for 5 minutes.

In a saucepan, combine sugar, corn syrup, and remaining 1/2 cup of water. Cook over medium heat, stirring occasionally, until the mixture reaches 240°F (115°C) on a candy thermometer.

Remove the saucepan from heat and stir in the bloomed gelatin mixture until fully dissolved.

In a large mixing bowl, beat the gelatin mixture with an electric mixer on high speed until thick and fluffy, about 10 minutes.

Stir in the toasted pine nuts and vanilla extract.

Grease a baking dish with cooking spray and dust with a mixture of powdered sugar and cornstarch.

Pour the marshmallow mixture into the prepared baking dish and smooth the top.

Let the marshmallow rest at room temperature for at least 2 hours, or until set.

Once set, cut the marshmallow into squares or desired shapes.

Dust the marshmallow pieces with the remaining powdered sugar and cornstarch mixture to prevent sticking.
