In a large bowl, mix the flour and water to form a dough. Knead for a few minutes until smooth. Cover and let rest for 30 minutes.

Meanwhile, boil the potatoes until tender. Drain and mash them.

In a skillet, melt the butter and sauté the onion until translucent.

Combine the mashed potatoes, sautéed onion, sour cream, salt, and pepper in a bowl. Mix well.

Roll out the dough on a floured surface and cut out circles.

Place a spoonful of the potato filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges.

Boil the pierogi in salted water for about 3-4 minutes, or until they float to the surface.
