Preheat the oven to 325°F (163°C). Grease a 9-inch (23 cm) springform pan.

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.

In a small bowl, dissolve the instant coffee granules in hot water. Set aside.

In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the flour, vanilla extract, and dissolved coffee mixture. Mix until well combined.

Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.

Pour the batter over the crust in the springform pan. Smooth the top with a spatula.

Bake for 55-60 minutes, or until the center is set and the top is lightly browned.

Remove from the oven and let cool in the pan for 10 minutes. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan.
