Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9x13-inch baking dish.

In a large mixing bowl, beat the cream cheese, sugar, lemon juice, lemon zest, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
