  1. Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9x13-inch baking dish.
  2. In a large mixing bowl, beat the cream cheese, sugar, lemon juice, lemon zest, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  3. Pour the cream cheese mixture over the crust in the baking dish. Smooth the top with a spatula.
  4. Bake for 25 minutes or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool to room temperature.
  5. Refrigerate for at least 2 hours or until chilled and set.
  6. Cut into bars and serve with whipped topping.
