Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter; press onto bottom of 13x9-inch baking pan.

Beat cream cheese, sugar, and vanilla in large bowl with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in coconut; pour over crust.

Bake 25 to 28 min. or until center is set. Cool completely. Refrigerate 2 hours. Cut into bars.
