Beat in the egg and vanilla extract.

In a separate bowl, whisk together all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with milk, until well combined.

Divide the dough into 24 equal portions and roll each portion into a ball.

Place the dough balls on a baking sheet lined with parchment paper and flatten them slightly with the bottom of a glass.

Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until the edges are golden brown.

Allow the cookies to cool completely.

Spread a teaspoon of jam on the bottom side of half of the cookies.

Top with the remaining cookies to form sandwiches.
