Peruvian Hot Puffs
Peruvian Hot Puffs, also known as ‘Papa Rellena’, are a popular street food in Peru. They are often filled with seasoned ground beef or chicken, but this vegetarian version with cheese and aji amarillo paste is just as delicious!
This is vegetarian recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 400°F (200°C) and grease a muffin tin.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, beat the eggs. Add the milk, melted butter, and aji amarillo paste. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the cheese and cilantro.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 15-20 minutes, or until the puffs are golden brown and cooked through.

Remove from the oven and let cool for 5 minutes before serving.
