  1. Preheat the oven to 350°F (175°C). Grease and flour a baking dish.
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. In another bowl, mash the persimmons until smooth.
  4. In a large bowl, cream together the butter and sugar. Add the eggs and vanilla extract, and mix well.
  5. Gradually add the flour mixture to the butter mixture, alternating with the mashed persimmons.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Once cooled, sprinkle powdered sugar on top.
  10. Cut into bars and serve.
