Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract, flour, cocoa powder, instant coffee granules, and peppermint extract to the bowl. Mix until well combined.

Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.

Flatten each ball with the bottom of a glass and sprinkle crushed candy canes on top.

Bake for 10-12 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
