In a mixing bowl, cream together the butter and sugar.

Add the golden syrup and mix well.

In a separate bowl, combine the ground ginger, ground cinnamon, ground cloves, plain flour, and bicarbonate of soda.

Gradually add the dry ingredients to the butter mixture, mixing until well combined.

Add the cold water and mix until the dough comes together.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Roll out the dough on a lightly floured surface to a thickness of about 3mm (1/8 inch).

Use cookie cutters to cut out shapes from the dough and transfer them to the prepared baking sheet.

Bake for 8-10 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
