Peas with Ricotta and Spring Onion Kimchi

Bring a pot of salted water to a boil. Add the peas and cook for 2-3 minutes until tender. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add spring onions and sauté for 2 minutes until softened.

Add the cooked peas, ricotta cheese, kimchi, salt, and black pepper to the skillet. Stir well to combine.

Cook for another 2-3 minutes until heated through.

Remove from heat and stir in lemon juice.

Serve the peas with ricotta and spring onion kimchi garnished with fresh cilantro.
