Scoop about 1 tablespoon of cookie dough and flatten it in your palm. Place a small amount of the peanut butter mixture in the center and fold the cookie dough over to seal. Roll into a ball and place on the prepared baking sheet. Repeat with the remaining dough and peanut butter mixture.
