Peanut Butter Cupcakes with Chocolate Fudge Frosting
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a large bowl, cream together the butter, granulated sugar, and peanut butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
-
Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.
-
In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. Let the ganache cool for 10 minutes, then whisk in the powdered sugar.
-
Once the cupcakes are cooled, frost them with the chocolate fudge frosting. Top each cupcake with chopped mini peanut butter cups.
-
Allow the frosting to set for 30 minutes before serving. Enjoy!
