Peanut Butter and Jelly Truffles

In a mixing bowl, combine creamy peanut butter, powdered sugar, vanilla extract, and salt. Mix well until smooth.

Add graham cracker crumbs to the mixture and stir until fully incorporated.

Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Using your thumb or the back of a spoon, create an indentation in the center of each ball.

Fill each indentation with a small amount of strawberry jam.

Place the baking sheet in the refrigerator and let the truffles rest for about 1 hour.

In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between, until smooth and fully melted.

Dip each truffle into the melted chocolate, coating it completely. Use a fork to lift the truffle out of the chocolate, allowing any excess to drip off.

Place the coated truffles back on the parchment paper-lined baking sheet.

Sprinkle crushed peanuts on top of each truffle while the chocolate is still wet.

Return the baking sheet to the refrigerator and let the truffles set for another 30 minutes.
