  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, toss the sliced peaches with 2 tablespoons of granulated sugar. Set aside.
  3. In a large bowl, whisk together the flour, 2 tablespoons of granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk and vanilla extract until just combined.
  5. Drop spoonfuls of the shortcake batter onto the prepared baking sheet, forming 6 individual shortcakes. Bake for 15-18 minutes, or until golden brown.
  6. While the shortcakes are baking, heat a grill pan over medium-high heat. Grill the peach slices for 2-3 minutes per side, until lightly charred.
  7. To serve, place a shortcake on each plate. Top with grilled peaches, whipped cream, and a sprig of mint. Enjoy!
