In a large bowl, whisk together the millet flour, all-purpose flour, baking powder, salt, and ground cinnamon.

In a separate bowl, whisk together the milk, egg, vegetable oil, honey, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the sliced peaches.

Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.

Pour 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, then flip and cook until golden brown.

Repeat with the remaining batter.

Serve the pancakes with maple syrup and additional sliced peaches, if desired.
