  1. Preheat the oven to 325°F (163°C) and prepare a chiffon cake pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the vegetable oil, egg yolks, peach puree, and vanilla extract to the dry ingredients. Mix until well combined.
  4. In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter until no streaks remain.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes.
  9. Invert the cake onto a wire rack and let it cool completely.
  10. Dust with powdered sugar before serving.
