Preheat the oven to 425°F (220°C).

Grate the potatoes and onion using a box grater or food processor.

Place the grated potatoes and onion in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, beat the eggs. Add the grated potatoes and onion, flour, salt, and black pepper. Mix well.

Heat 1 tablespoon of vegetable oil in a large oven-safe skillet over medium heat.

Drop spoonfuls of the potato mixture into the skillet and flatten them with the back of a spoon.

Cook for 3-4 minutes on each side, until golden brown.

Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, until the pancakes are cooked through and crispy.

Remove from the oven and serve hot.
