  1. Preheat the oven to 325°F (163°C).
  2. Line a muffin tin with cupcake liners.
  3. Place an Oreo cookie at the bottom of each cupcake liner.
  4. In a mixing bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, and mix until well combined.
  6. Beat in the eggs, one at a time, until fully incorporated.
  7. Pour the cheesecake mixture over the Oreo cookies in the cupcake liners.
  8. Bake for 20-25 minutes, or until the cheesecakes are set.
  9. Remove from the oven and let cool in the muffin tin for 10 minutes.
  10. Transfer the cheesecakes to a wire rack and let cool completely.
  11. Once cooled, refrigerate for at least 2 hours.
  12. Before serving, top each mini cheesecake with a dollop of whipped cream and sprinkle with crushed Oreo cookies.
